This is a beautiful winter salad, with a great texture and flavours. Purple cabbage is a wonderful, versatile vegetable that can be enjoyed raw, fermented or cooked, thought to lower inflammation and protect against certain types of cancer.
Tip on how to cut cabbage- First of all, when you buy cabbage, it has to look healthy. You will need to remove the outside leaves, before shredding, then slice the cabbage in half. Place the cabbage cut side down and slice it around the edge until you get to the core (which should be discard).
Ingredients:
1/2 head of medium purple cabbage
2 chopped carrots
1/4 cup of golden raising
4 tbsp vinegear
2 tbsp organic olive oil
1 garlic clove
2 tbsp pumpkin seeds
1 tbsp sesame seeds
pinch of kosher and pepper
Instructions:
Shred the cabbage, mix all dry ingredients to combine
Grab a little jar with a lit and put all the wet ingredients, salt and pepper in it. Close the lid and shake the jar.
